Taco Salad!

Now off to breakfast! I had Trader Joe’s Greek Yogurt with fresh blueberries, goji berries and some blackberry preserve.  I added half a French Meadow Hemp Organic Bagel with Trader Joe Almond Butter and banana!!

I got these Trader Joe Beef-less Steak Strips a bit ago and decided to use them before they went bad.  I came up with  a healthy taco salad! I used Organic Blue Corn Tortilla Chips with lettuce, the beef-less steak with melted 2% cheese with salsa and sour cream.

simple food

Today’s breakfast was very simple! I was still stuffed from yesterday’s dinner that I just wanted something light for breakfast.  I had a greek yogurt with vanilla granola, blackberries, strawberries, blueberries and a little bit of honey drizzled over

I added a fresh Apricot with it. I’ve always loved Apricots from the can so when I saw them fresh as the grocery I was excited to try one!

Sunday at the Tavern

So Saturday Kris came to town to catch the Beyonce performance (why I didn’t bring my camera I don’t know, but she performed a few songs on a stage in the middle of the crowd and we were very close to her!). 

Sunday was a day of running errands and taking it easy! We ate at a nice restaurant called The Village Tavern. It was a bit humid out but they had fans blowing and it was pretty we had to sit outside!

I’ve come here a few times for dinner, but I usually love to come Saturday nights for $ 5.00 martinis. They are so yummy! Today though, I had a water with lemon.

 Kris and I had an appetizer but I was so hungry (only had a Larabar) that I started eating as soon as the plates hit the table! Sorry no pic.

For our entree we both got Flatbreads. I got the Spinach flatbread (and added chicken) and Kris got the Greek Flatbread. I had about two or three slices plus one of Kris’. The slices weren’t that big and the flatbread was light so I didn’t stuff myself!

 Next we just haaaaad to get dessert at the most delicious bakery I’ve ever experienced! It’s called Maxi B’s and they make the most delicious cupcakes and cakes ever!

But since it was hot out, I thought I’d try some of their homemade ice cream.  I got the Oatmeal Cookie Ice Cream topped with Heath Bar pieces. I was not disappointed! I’ve never had Oatmeal Cookie Ice Cream bit I know I will definitely get it again!

 As the day drew to a near and Kris went home I was exhausted! I was so ready to lay down and just get to bed! I’m not sure what the dogs did all day while I was out but by the looks of it Bartleby was ready for bedtime too!

Beans and Franks

This morning I had a simple Trader Joe’s Greek yogurt with a bit of locally grown honey and Strawberry/Raspberry granola.

I am still having Hot Dog cravings so I bought some Ball Park Turkey all white meat hot dogs.  I put them on the griddle for a bit and for one of the hot dogs I put it on a wheat bun with some red oinions, ketchup and mustard.

The other dog was chopped up and put in a bowl of Trader Joe’s Organic Baked Beans.  I had a little bit of my tabuli but this time added some feta cheese to it, it was much better this way!

To top it all off I added a nice salad chock full of colorful veggies!

P.S.– I am sooo upset/frusterated/angry at the moment. I don’t know HOW it happened but I was writing my post for today and SOMEHOW my post from father’s day go cancelled. Like an idiot I have already deleted the pics from my camera AND I also wrote a personal piece focusing on my thought about using food as a “reward”.  I put a lot of thought into that post and now it’s gone!! GRRRR, I wish there was a way to backup my posts! If anyone knows how please let me know. I’d hate for this to happen again!!

Gotta Have Fruit

So I’ve been eating a lot of fruit lately! That’s because I bought a lot ha! Today’s Breakfast included Greek Yogurt and……FRUIT!

I collected an array of different berries including Blueberries, Strawberries and Raspberries.  I topped it off with Oikos Plain Fat Free Greek Yogurt and sprinkled some Acai Apple granola I got from Earthfare. 

I also added some dried Goji berries I had decided to try from Earthfare.  I really enjoyed these because they added a little chewiness to the mix; you can dried cranberries or some raisins for the same affect!

For dinner I had a random array of food! I took a small slice of tomato pie and ate a little bit of Earthfare Soy Chicken, then I added a smoothie (thanks R.R.!).

  • Scoop vanilla whey protein
  • spoonful of Barney Butter
  • 1/4 banana
  • tsp creatine
  • handful of greens
  • few ice cubes
  • 1/4 plain low fat organic yogurt
  • 1/4 almond milk

You can’t tell by the picture but it did turn out green! This is my first time using greens in a smoothie and it was so yummy!

Breakfast Ahoy!

I decided for today’s breakfast to make my own sausage,egg and cheese biscuit.  Although clearly the egg dominates!

I used Ezekiel English muffin, three egg whites, Kraft 2% Shredded cheese and a Morningstar Sausage patty.  A side of fruit added to this filling meal!

To End A Friday

I topped off the Friday’s workout by doing legs (my absolute favorite thing to do at the gym!). I again made it another hour and half night.  I’m not sure has made me stay so long this week at the gym this week.  I very well could have gone in for 20 minutes and worked my butt off and have just as good results.  The key to your workout isn’t duration, but constancy and intensity. I guess I’m just a gym rat!

 We had had a late lunch so I wasn’t too terribly hungry when I got home. I decided to make myself a smoothie.

  • 1/4 cup organic plain yogurt
  • 1/4 cup almond milk
  • 3 strawberries (frozen or fresh)
  • 3 slices of peaches (frozen or fresh)
  • 1 scoop vanilla whey (I used Optimum Nutrition)
  • couple of ice cubes

So for lunch (after about an hour of discussing) all the gals finally agreed to get food from Moes.  Moe’s is a little southwestern mexican place with lots of yummy burritos, fajitas, etc.  I decided it was best to get a kid’s meal.  When eating “fast food” type places, if salads aren’t an option, or you simply do not want one, it’s a good idea to order something off the kid’s menu.  The portions are much smaller.

I went for the Joey Jr.  I also had brought a nice garden salad from home.  I did indulge a bit and I decided to grab a few chips and some queso! It’s too delicious to pass up!

My burrito had a  little scoop of rice, some black beans,steak and a sprinkle of cheese.  Used my own reduced-fat Sour Cream from the office. It ended up being a perfect portion size!

Biscuit Friday

Okay, so at my work every Friday we get our brekfast bought for us. Sometimes we are able to get something from a diner or even IHOP, but usually it’s from a generic biscuit place. 

In this instance, I tend to get a plain grilled chicken biscuit.  Here’s the catch, I eat the grilled chicken but only about a quarter of the biscuit. The chicken provides lots of good protein while I get a little bit of fat and carbs but the delicious golden brown biscuit.

I also usually bring a little something from home to add to it, today I brough Oikos Greek Plain yogurt, put a little Tupelo Honey that I got from my farmer’s market, hand full of blueberries and topped it with some crushed Nature’s Own Pumpkin Cereal.

I looove Greek yorgurt. There are many different types you can try Oikos, Fage, and Chobani. When I eat it I usually get the plain and add ingredients myself (flavored ones have waaaay too much sugar).  You will definately need to add ingredients beacause Greek yogrut is much different than regular.  It is much thicker and can have a bit of a sour taste to is, but trust me, with the low calories and amount of protein in it, it’s worth it.

Greek yogurt is also great to add to your meals, add to oatmeal, potatoes, it can be a great substitute for sour cream!

I’ll feature Greek yogurt a lot more and experiment with lots of different ingredients!

It’s not my number one choice for breakfast meals. but it’s a good way to keep it somewhat healthy if you are eating someplace that doesn’t have all the healthy options you need.

Jumpstart Morning

Good morning to everyone! I got up this morning at 7:00 and began to face the day! I grabbed all my containers from the fridge and packed it up for the day.  Usually around dinner time I plan out in my head what I will bring for the next day, this makes it easy in the morning to know exactly what I need.

Here’s breakfast for today:

The famous griddle makes its first appearance! I took 3 egg whites and 1 whole egg along with Sargento Reduced-Fat Pepper Jack to make a nice omelet.

I also added some fresh strawberries, blueberries and a slice of Ezekiel Sprouted bread which I toasted and put about a quarter of a tablespoon of Maranatha Crunchy Almond Butter.

Yum! Breakfast is the most important meal of the day. Your body has been at a rest for the past 7-8 hours and has gone through a brief state of stravation.  Skipping breakfast keeps your body in a starvation mode which is the last thing you want.

Breakfast  jump starts your metabolism, gets you focused for the day and gives you the energy you need to function.  It is important to note that every meal should include some sort of protein (eggs), complex carb (Ezekiel bread) and healthy fat (almond butter).

Breakfast is my absolutely favorite meal of the day! I love to experiement with it!

My Pantry!

I have a very small kitchen but I manage to fit A LOT of food in it! I like going grocery shopping almost every weekend (it’s my obsession).  I usually hit the Farmer’s Market, Wal-mart, Earthfare and Harris Teeter….overboard? Not at all! :p

Sunday is my day to have all my meals and snacks made for the week.  The key to having healthy meals simply and easily is preperation. I make my chicken and freeze it, I make my oatmeal bars and freeze them, cut up my fruits and wash all my greens.  This makes it easy so when I wake up and get ready for work all I have to grab and go!

 

Here is what my pantry and fridge look like after a typical Sunday grocery shopping trip:

My Essentials–

  • Organic Milk
  • Cage free eggs
  • Berries (strawberry, blueberry, raspberry)
  • Greek yogurt
  • Reduced/low fat cheese
  • Greens (romaine, kale, mustard or spinach)
  • Chopped Vegetables for salad (green peppers, cucumbers, celery, broccoli, tomato)
  • Organic Carrots and Celery
  • Hummus
  • Steam Veggies
  • Bananas, Apples, Oranges, Grapefruit
  • Ezekiel Sprouted Bread
  • Chicken Breast
  • Plain Oatmeal
  • Almond butter and Better N’ Peanut Butter
