Weekend Full Of Birthdays!

Soo Happy Birthday America (july 4th), My Dad (July 5th) and Kris (june 23th). Today was an extremely busy day for me.  I got up and headed straight to the gym.  I’ve been kinda of lazy this week about going, even today when I got there I wasn’t really feeling it.  My intention was to do cardio but after getting on a machine for about 5 minutes I wasn’t having it.  I ended up doing full body workout and jump rope.

When I got home I decided to do some baking for the birthday dinner bash at Grandpas.  First thing I made was Healthy Oatmeal Cookies.  I found this recipe online but I swapped out a few ingredients to make this healthier. Here’s what I used:

  • I cup Whole Wheat Flour
  • 1 1/2 cups of Quaker Oatmeal
  • 1/2 tsp of baking soda AND baking powder
  • 1 /2 tsp salt
  • 1 tbsp of cinnamon
  • little sprinkle of nutmeg
  • 1/4 cup honey
  • 1/4 cup light brown sugar
  • 1/4 cup olive oil
  • 1/4 cup applesauce
  • 1 egg
  • 1 tsp vanilla
  • 1/4 cup cranberries
  • 1/4 cup walnuts

First mix the dry ingredients in one bowl and then add the wet ingredients in another bowl (when you use honey, try spraying some PAM so that the honey will come out easier instead of sticking to the cup).  Put the wet and dry ingredients together and mix well.

Next mix in the nuts and cranberries. I decided to use the Organic Cranberries that Newman’s Own had sent me

Let the mixture set in the fridge for about 20 minutes. 

After it’s set turn the oven on to 340 degrees. Using a spoon scoop out medium sized dollops onto a cookie sheet.  I used a fork to press them down and shape them into a cookie shape.  Cook them about 15-18 minutes.  I cooked mine at about 20 and they turned out well but a teeny bit dry.

Although a tiny bit dry they ended up pretty tastey. Depending on how big you make the cookies, you actually get a lot.

I ALSO decided to make Whole Wheat Banana Bread. This one isn’t soooo terrible for you, but I decided to use butter instead of applesauce because this was my first time making this recipe and I wanted to make sure it was edible for the family!

  • 1/3 cup unsalted butter, softened at room temperature
  • 1/4 cup honey
  • 1/4 cup packed natural brown sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 1/2 cup mashed over-ripe bananas
  • 1 3/4 cup white whole wheat flour
  • 1/2 tsp kosher salt
  • 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 cup water
  • 1/4 cup chopped walnuts
  • In one bowl mix the flour, cinnamon, and salt. Lightly toss the ingredients so they are all combined.  In another bowl, mix the honey, butter and brown sugar and beat the mixture for about two minutes.  Add the eggs and lightly whisk to combine.  Mix in the banana and vanilla.

    Next begin to add the flour mixture to the wet bowl.  Add the flour in gradually, pouring a little bit in at a time and mixing, then repeat.  After you’ve mixed the wet and dry ingredients add dilute baking soda (1/4 cup of hot water with baking soda mixed in).   Pour the batter into 9×5 dish

    Set the oven to about 320 and put the pan in for about 45 minutes.  I baked the bread for close to ten minutes then added the walnuts on top.

    After all my baking and packing the pups and I were off to Raleigh!  I decided to make stuffed peppers like I had the other night.  this time I decided to cut the peppers in half (these babies were HUGE).

    Dad and I went to Grandpas, I played with the new pup Parker! He’s so cute! Bartleby is jealous that he’s not the cute one anymore

    And of course some Banana Bread! I think everyone enjoyed this, it was eatin up pretty fast!

    The spread we had was delicious. Filet, Stuffed Green Pepper, Corn on the Cob, Baked Beans, Canteloupe and some healthy Potato Salad that grandpa made!

    Of course we had some fabulous desserts!! Grandpa had a blueberry extravaganza, he made blueberry pie and mini blueberry cheesecakes (from scratch).  The was more for dad—

    Think 2 Hours Is Long Enough?

    Lunch was super yummy! I decided to make my veggie-hummus wrap.  I used cucumber, zucchini, tomato and squash along with Roasted Red Pepper Hummus with Feta. 

    I added some blueberries, Annie’s Cheddar Bunnies and suuuch delicious Honey Wheat Mini Pretzels from Newman’s Own Organics.

    So I went to they gym tonight to work on legs. TWO HOURS LATER I was done.  TO be fair though, some of that time was spent chatting with friends BUT I was still trying to work my legs hard.

    On the way home I got a text from Rodie and Summer who were having pizza and beer at the most delicious pizza joint in Greensboro.  I popped over there for a bit to chat.  By this time it was almost 9 pm and I was starrrrrrrving. I decided to order some food from Boba House, the best vegetarian restaraunt!

    I was bad and ordered the “chicken” drumsticks and yam fries.  They weren’t fried and greasy but it was a lot of carbs!

    For dessert I tried out Good Karma Organic Rice Divine Ice Cream.  It was Mudd Pie flavor, but it tasted more like a coffee flavor.  I had a little scoop and I actually enjoyed it!

    saturday morning

    It’s Saturday, 7:30 am, WOW I’m up pretty early! I guess when I’m so used to getting up for work everyday my body (and the pups) are so used to it.

    Sorry there was no post for yesterday! As soon as I got off work I went straight to the gym for some cardio and then straight home to clean for my aunt. She’s coming to town to take me and my homegirl Summer to see JACK’s MANNEQUIN and THE FRAY!!!!!

    Before she comes I decided to head to the gym for another cardio session.  The FABulous folks at Clif Bar sent me some samples to try!  I had a Cranberry Apple Cherry bar!  I know I needed a little something on my stomach for a hard cardio session! I only ate about half and decided to save the rest for a snack later!

    I’ve heard/read from many different sources that when you do cardio first thing in the morning you should do it on an empty stomach because you will burn fat and not the food you just ate.   I however would not do this.  Think about it, for about 6-8 hours your body has had NO FUEL, it has essentially put itself into a starvation mode.  You need a little bit of energy to push through a hard cardio session.  Now don’t go eat a meal that’s going to sit in your stomach or one that will make you stuffed, but  I do think that you do need a little something. 

    I’m glad I had the Clif bar before I left! I didn’t feel like it weighed me down in my workout and it gave me enough energy so I could really go hard and not feel lightheaded! PLUS it’s made with organic ingredients, and ya’ll know I love organic!!!!

    Big 'Uns

    I don’t about some of you, but I’m top heavy (34DD to be exact). For me, it can be a difficult task to find a sports bra that feels comfortable and keeps the girls in check, especially during cardio.  Right now I’ve got a couple that I especially like, but my favorite to wear during cardio sessions is the Champion Double Dry Full Support Underwire.  I provided the link to the official website below, but you can also get them at sports stores or (like me) Kohls.

    Now I do have a gripe for sports bras made for women with bigger busts.  How come some of them are so ugly! What is most important is they support yes, but must they all be so bulky, chunky and plain?? I’m not saying that I’m walking around the gym in my sports bras, but can a girl get some color?? How about a cute pattern?  I just notice that when I’m looking at sports bras I see so many cute ones, but realize the bras made for busty women are so plain and thick. Why is that???

    Below is a site I found whose sports bras are supportive (although I have not personally tried one myself) and although they still aren’t as cute as I would like, they do have a few different styles and bright fun colors.

    To End A Friday

    I topped off the Friday’s workout by doing legs (my absolute favorite thing to do at the gym!). I again made it another hour and half night.  I’m not sure has made me stay so long this week at the gym this week.  I very well could have gone in for 20 minutes and worked my butt off and have just as good results.  The key to your workout isn’t duration, but constancy and intensity. I guess I’m just a gym rat!

     We had had a late lunch so I wasn’t too terribly hungry when I got home. I decided to make myself a smoothie.

    • 1/4 cup organic plain yogurt
    • 1/4 cup almond milk
    • 3 strawberries (frozen or fresh)
    • 3 slices of peaches (frozen or fresh)
    • 1 scoop vanilla whey (I used Optimum Nutrition)
    • couple of ice cubes

    So for lunch (after about an hour of discussing) all the gals finally agreed to get food from Moes.  Moe’s is a little southwestern mexican place with lots of yummy burritos, fajitas, etc.  I decided it was best to get a kid’s meal.  When eating “fast food” type places, if salads aren’t an option, or you simply do not want one, it’s a good idea to order something off the kid’s menu.  The portions are much smaller.

    I went for the Joey Jr.  I also had brought a nice garden salad from home.  I did indulge a bit and I decided to grab a few chips and some queso! It’s too delicious to pass up!

    My burrito had a  little scoop of rice, some black beans,steak and a sprinkle of cheese.  Used my own reduced-fat Sour Cream from the office. It ended up being a perfect portion size!

    Salmon Time

    Well as soon as I was leaving work the bottom fell out! I debated whether or not to actually go to the gym but I’m glad I did!

    I did shoulders and triceps. While I was there I had a huge bodybuilder come up to me and say my legs were almost as big as his! (actually his were huge but the fact that someone said I had big muscular legs boosted my ego! :p)

    On to Dinner!!

    I decided to cook my salmon since I had taken it out the night before. Got to get in my omega-6′s.

    I started off with some asparagus first I pre-heated the oven to 400, then i washed and cut the asparagus, added some Extra Virgin Olive Oil, sprinkled some salt and pepper and sprayed a little bit of butter. I cooked it for about 40 minutes, or until it got tender

    Now for the salmon! I had very thin Salmon I got in the cold section of the grocery, it’s by Vita. I added a sauce on top. My Salmon was thin and small so you will need to adjust the measurements according to how big of a fish you are cooking:

    • 1/4 cup reduced sour cream
    • tablespoon mustard
    • tablespoon lemon juice
    • pepper

    I left the oven at 400 and popped the fish in for about 8 minutes. The fish was cut into little slices, they kind of fell apart as I put them on the plate :p! A nice glass of milk topped it all off!

    Even the boys had their own tastey and healthy dinner! Pup chow and egg yolk! Yummy and shiny coats for them!

    I Love Biceps

    Another night of working out at the gym for almost an hour and half.  I didn’t burn as many calories as yesterday, heart monitor said 428.  I did chest and biceps today.  I LOVE working biceps.  I think I’ve built up some nice muscles! I’ve got a nice video of my favorite power workout couple Peter and Jessica Paxson Putnam.  Here they are doing some great bicep work:
