cure for a hangover

So you know after a night of drinking you really want to eat a ton but when you order all your food you can only take a bite.  Yeah that happened to me. 

I went to Cracker Barrel to order a lot of food and eat three bites, but those three bites were tasty!

I started with Water and Sweet Tea, I was going to get some OJ but I figured that would be overkill

I ordered up some Oatmeal with pecan pieces and banana

I also got Turkey Sausage and Egg Beaters, I only ate about half of this

I don’t go out a ton but it’s nice once and awhile to meet new friends! Even if the next day you have a bit of a hangover, but thank goodness good friends take you to Cracker Barrel…good times!

I felt like doing a little baking today. Using the Banan Bread Recipe I made for July 4th weekend I decided to make cupcakes. This time I used Applesauce instead of butter

I put different things in each cupcake, Barney Butter, Blueberries, Granola, Peanut Butter and Co. Dark Chocolate Dreams, Newman’s Own Dried Apricots, Newman’s Own Organic Dark Chocolate, Peanut Butter and Co. Cinnamon Raisin Swirl, Walnuts

It didn’t take long for them to bake…I’m interested in trying them out!

Pancaaaaaaaaaaaaaaakes

I do dislike Mondays imensly! It felt more like  a Saturday, there was only three people in the office and I got the jist that no one is any office was ready to come back to work!  I began my morning making chocolate chip pancakes.

Mix 1/4 cup of Quaker Oatmeal, 1 Scoop of Vanilla Whey and 1 tablespoon of pancake mix.

Whisk in 4 egg whites and add Organic Dark Chocolate ( I used Newman’s Super Dark Chocolate)

Put those babies on the griddle, I made two large and one mini one! I added Sugar Free Syrup to the big ones and Trader Joe Crunchy Peanut Butter to the mini one!

Weekend Full Of Birthdays!

Soo Happy Birthday America (july 4th), My Dad (July 5th) and Kris (june 23th). Today was an extremely busy day for me.  I got up and headed straight to the gym.  I’ve been kinda of lazy this week about going, even today when I got there I wasn’t really feeling it.  My intention was to do cardio but after getting on a machine for about 5 minutes I wasn’t having it.  I ended up doing full body workout and jump rope.

When I got home I decided to do some baking for the birthday dinner bash at Grandpas.  First thing I made was Healthy Oatmeal Cookies.  I found this recipe online but I swapped out a few ingredients to make this healthier. Here’s what I used:

  • I cup Whole Wheat Flour
  • 1 1/2 cups of Quaker Oatmeal
  • 1/2 tsp of baking soda AND baking powder
  • 1 /2 tsp salt
  • 1 tbsp of cinnamon
  • little sprinkle of nutmeg
  • 1/4 cup honey
  • 1/4 cup light brown sugar
  • 1/4 cup olive oil
  • 1/4 cup applesauce
  • 1 egg
  • 1 tsp vanilla
  • 1/4 cup cranberries
  • 1/4 cup walnuts

First mix the dry ingredients in one bowl and then add the wet ingredients in another bowl (when you use honey, try spraying some PAM so that the honey will come out easier instead of sticking to the cup).  Put the wet and dry ingredients together and mix well.

Next mix in the nuts and cranberries. I decided to use the Organic Cranberries that Newman’s Own had sent me

Let the mixture set in the fridge for about 20 minutes. 

After it’s set turn the oven on to 340 degrees. Using a spoon scoop out medium sized dollops onto a cookie sheet.  I used a fork to press them down and shape them into a cookie shape.  Cook them about 15-18 minutes.  I cooked mine at about 20 and they turned out well but a teeny bit dry.

Although a tiny bit dry they ended up pretty tastey. Depending on how big you make the cookies, you actually get a lot.

I ALSO decided to make Whole Wheat Banana Bread. This one isn’t soooo terrible for you, but I decided to use butter instead of applesauce because this was my first time making this recipe and I wanted to make sure it was edible for the family!

  • 1/3 cup unsalted butter, softened at room temperature
  • 1/4 cup honey
  • 1/4 cup packed natural brown sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 1/2 cup mashed over-ripe bananas
  • 1 3/4 cup white whole wheat flour
  • 1/2 tsp kosher salt
  • 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 cup water
  • 1/4 cup chopped walnuts
  • In one bowl mix the flour, cinnamon, and salt. Lightly toss the ingredients so they are all combined.  In another bowl, mix the honey, butter and brown sugar and beat the mixture for about two minutes.  Add the eggs and lightly whisk to combine.  Mix in the banana and vanilla.

    Next begin to add the flour mixture to the wet bowl.  Add the flour in gradually, pouring a little bit in at a time and mixing, then repeat.  After you’ve mixed the wet and dry ingredients add dilute baking soda (1/4 cup of hot water with baking soda mixed in).   Pour the batter into 9×5 dish

    Set the oven to about 320 and put the pan in for about 45 minutes.  I baked the bread for close to ten minutes then added the walnuts on top.

    After all my baking and packing the pups and I were off to Raleigh!  I decided to make stuffed peppers like I had the other night.  this time I decided to cut the peppers in half (these babies were HUGE).

    Dad and I went to Grandpas, I played with the new pup Parker! He’s so cute! Bartleby is jealous that he’s not the cute one anymore

    And of course some Banana Bread! I think everyone enjoyed this, it was eatin up pretty fast!

    The spread we had was delicious. Filet, Stuffed Green Pepper, Corn on the Cob, Baked Beans, Canteloupe and some healthy Potato Salad that grandpa made!

    Homemade Chicken Salad

    Summer turned me on to this recipe when she made it herself.  It’s a version of healthy chicken salad.  I took about half a cup of organic plain nonfat yogurt, then I chopped up about half an apple into little pieces, havled fresh cherries, and mixed in 1/4 cup of walnuts and raisins.  Then I used chicken chunks from a can.

    I’ve never had canned chicken before but it works well with making chicken salad.  This chicken salad is very sweet!

    I paired the salad with low carb tortillas and carrots with hummus and some Stalker Fruit* with cinnamon!

    I was a little naughty today and ordered some spinach dip with tortilla chips.  BUT I do have to say that the place we ordered from is pretty healthy.  Often times if I am going to my house to let out the pups we will order from Hogan’s Groovy Gourmet. It’s not a sit down place, she does more catering events but you are still able to order and pick up.

    She grows all her vegetables herself and makes everything with reduced/low fat and organic products.  Maybe the tortilla chips weren’t the healthiest but I know that a majority of what she makes is good for you! Not to mention sooooo DELICIOUS! Unfortunately she didn’t have her pimento cheese made but it’s the best pimento I’ve ever had!

     

    Dessert was Newan-O Mint. They are a bit like Oreos with a hint of mint flavor.  I looooooved the cream filling, I actually started eating the cookies and just ate the cream center!!

    *Some of you might be wondering what Stalker Fruit is.  It’s no different than regular fruit you buy at the store or the Farmer’s Market, but when you are my friend Summer you get people to fall in love with you and bring you gifts. Today’s gift happened to be a big container of fresh cut fruit. DELIC!

    sweet breakfast

    So I don’t know about you, but I hae HUGE sweet tooth. I could eat sugar with any meal at any time of the day. I felt like breakfast today was a suitbale time to consume sugar.

    I had been buying different fun things to put in my oatmeal. Today I decided to just put a ton of different things!

    Here is what I put in mine today, somethings I measured, other things I just threw in!

    • 1/2 cup of Quaker Oats
    • sprinkle of Steel Cut Oats and Quinoa 7 Grain
    • spoonful of canned pumpkin
    • tbl of Peanut Butter Chips
    • little pieces of Newman’s Organic super dark chocolate (the BEST dark chocolate I’ve had in a loooong time)
    • sprinkle of cinnamon and pumpkin spice
    • 1/2 tbl of Maranatha AB and Dark Chocolate Peanut Butter

    This creation was fab! The Dark Chocolate Peanut Butter held most of the taste however (not that I am complaining). I would have like to have tasted the peanut butter chips a little more. Maybe next time I’ll skip the Dark Choco and add a little more Almond Butter!

    Father’s Day

    SIDE NOTE: This post had accidently been deleted awhile ago, however one of my FABULOUS reader’s (thanks Linda) had it still on her Google Reader so she sent it to me!! YAY! Enjoy this post a few days late

     

     

    Today is Father’s Day! I woke up mid-morning and got ready to drive to Raleigh for a supper with my dad, uncle, grandpa, aunts and cousins! My morning meal included a Clif Bar.

    After I munched I packed up the pups and was on my way! My contribution to the meal was bringing munchies for appetizers. I brought Trader Joes Blue Corn Tortilla chips with TJ’s Mild Salsa. I also added some Newman’s Own Organic Protein Pretzels and Annie’s Cheddar Bunnies. I had a grilled chicken salad for lunch so by the time dinner rolled around I was hungry! I snacked a lot these guys (a bit too much!).

    Dinner was very yummy and actually very healthy! We had grilled chicken I brought some tabuli I got at Whole Foods (it wasn’t the best, could have used a little more Olive Oil), green beans, roll, and pasta salad!

    Dessert is where we all got in trouble! Kris got the most delicious custard cake from Goodberrys. The crust was brownies! AHH! I had a HUGE pieces thanks to grandpas grande cutting skills, and then I went back for a smaller piece!

     Usually around a Harrison family dinner we come up with topics of discussion, most though involve politics or government. Tonight however, an interesting topic of conversation was brought up by my uncle Dan. We were all indulging in a delicious cake and as I was eating my second piece, he mentioned that eating this cake was our “reward” or “cheat meal”. I told him that I did not believe in using food as your “reward” for a week of eating right and exercising. I knew that tonight’s dinner would include some sort of dessert (it usually does at a Harrison dinner) so I took that into consideration in my food choices today. Breakfast was a Clif Bar, lunch was a salad with grilled chicken and dinner included a variety of healthy choices. The cake I ate (yes BOTH pieces) wasn’t a reward for anything I’ve done, it was simply part of today’s food choices. I knew that I was going to be indulging my sweet tooth tonight so I made room for it in my diet. I know that tomorrow I’ll be right on track with my eating habits and that I’m allowed to have treats for myself throughout the week so there is no need to “reward” myself and I won’t overindulge. Tonight’s second piece was because the cake was suuuuuuper good, was it the best decision? absolutely not but I won’t beat myself up about it because I know I am disciplined enough to get right back on track and just move on from it.

    People who struggle with eating may not be able to easily get right back on track.  You can’t just eat a piece of cake or a large fries without having emotions about it afterwards.  After a week long of eating right and exercising and feeling good about yourself, why would you want to reward yourself with the same foods you’ve worked so hard to avoid in order to be healthy? After all, isn’t it those fried, sugary, high calorie, fatty foods that got us in trouble in the first place? Why have a free for all one day or one meal of these bad foods?  Would you give a person who is trying to quit smoking a cigarette as a “reward” for not smoking? No right? Then why would you do it with food?

    There are a million different ways to reward yourself.  If you feel you’ve had a great week and have stayed right on track with your nutrition and exercise, why not get a manicure? or a massage? or even get some new clothes, won’t it be reward enough when you go to try on new clothes and find the size you used to wear is just a bit too loose? Only you can decide what’s more important, having that double stack burger, or feeling great about your body, your health and overall happiness.

     

    In the lasted issue of Shape Magazine (July 2009 pg 25) they have a great little blurb titled “8 Reasons to Start Loving Your Body Today”  I really enjoyed reading this and I wanted to share with all of you:

    1. BECAUSE it’s unique; no one else has the same one
    2. BECAUSE it’s capable of extraordinary feats, enabling you to run, climb, jump, lift, squat, snuggle and spoon
    3. BECAUSE no matter how badly you treat it, it’s willing to give you another chance
    4. BECAUSE it’s expressive tell you how it feels (pay attention!) and broadcasting  to others how you feel about it
    5. BECAUSE let’s face it, confidence is sexy
    6. BECAUSE your daughter must learn to love her
    7. BECAUSE somebody out there (or many somebodies!) admires, covets and adores it
    8. BECAUSE you’ll regret not loving it more later

    Think 2 Hours Is Long Enough?

    Lunch was super yummy! I decided to make my veggie-hummus wrap.  I used cucumber, zucchini, tomato and squash along with Roasted Red Pepper Hummus with Feta. 

    I added some blueberries, Annie’s Cheddar Bunnies and suuuch delicious Honey Wheat Mini Pretzels from Newman’s Own Organics.

    So I went to they gym tonight to work on legs. TWO HOURS LATER I was done.  TO be fair though, some of that time was spent chatting with friends BUT I was still trying to work my legs hard.

    On the way home I got a text from Rodie and Summer who were having pizza and beer at the most delicious pizza joint in Greensboro.  I popped over there for a bit to chat.  By this time it was almost 9 pm and I was starrrrrrrving. I decided to order some food from Boba House, the best vegetarian restaraunt!

    I was bad and ordered the “chicken” drumsticks and yam fries.  They weren’t fried and greasy but it was a lot of carbs!

    For dessert I tried out Good Karma Organic Rice Divine Ice Cream.  It was Mudd Pie flavor, but it tasted more like a coffee flavor.  I had a little scoop and I actually enjoyed it!

    late lunch

    Today we ate lunch suuuuuuper late (around 3!). I brought in some delicious Chile Lime Chicken Patties from Trader Joes.  The patty reminds me a bit of a Boca Veggie Burger.

    I put it on my griddle for about 3-4 mins each side and warmed my whole wheat bun.  I added some lettuce and a slice of tomato on the sandwich.

    For my sides I put 1/2 cup of my Three Bean Salad and a few Baked Ruffles with Dip.

    For dessert I shared some Alphabet Cookies from Newman’s Own Organics.  It tastes like an animal cracker but better! It had a nice crunch!

    Quinoa Time!

    So this is my first time making Quinoa myself.  I have eaten it before and enjoyed it very much! Although it looks like a grain, Quinoa are actually tiny seeds and are distant relatives to spinach and beets.

    I got a box from Trader Joes.  There are two ways you can make Quinoa, via stove stop or microwave.  Since this was my first making it myself, I decided to make it stove top to have for the next day.

    I put about 1 cup of water in a saucepan and 1/4 cup of Quinoa. I brought it to a rapid boil and then turned it down to simmer.  I let it simmer until the Quinoa absorbed most of the water. 

    I then put the Quinoa in a container and sprinkled some salt, pepper and a little parsley followed by some drizzle of olive Oil.  I chopped some chicken breast that I had taken down from the freezer, then I halved about 10 grapes and added crushed almonds.

    I added some baby carrots. I really liked Quinoa, it is a very versatile food. Not to mention it has numerous health benefit; it has enzymes, vitamins, minerals, fiber and antioxidants.

    I also brought in some Newman’s Own Organic Champion Chocolate Chip cookies; I shared with everyone at work.  I love these cookies!

    burned out

    I think that I’ve burnt myself out at the gym.  I went today and just was not feeling it.  I went for about 50 minutes and decided to call it quits!

    I had taken down steak for the night.  This cut is Eye of Round. I did my best to Butterfly Cut it, I added some pepper to both sides, then added Goat cheese and Basil.  I rolled the two pieces together and secured it with a few toothpicks.

    I took a skillet and added a little Olive Oil to it and placed the steak on it.  I turned the oven on to 400 and cooked the steak on the skillet until it got nice and brown on both sides.

    I put the steak into the oven for about 12 minutes. By the way, I think it’s time i get a new pan, my whole house was smokey!!

    For dessert I tried some DELICIOUS chocolate chip cookies that the generous folks at Newman’s Own Organics sent me.  I could have just sit there all night and eatin’ all of these! Each cookie has nice big chunks of chocolate; heavenly!
