I decided to eat some of the fresh fish I’ve had for abit in my freezer.  I got it at a little fish joint at Myrtle Beach when I visited my mom.  I used the method that my mom told me about and make the most delicious tasting fish!  I used a cast iron pan and set the burner on medium and turned the oven to 450 degrees.

I put some pepper on the fish, squeezed a little leomn juice and sprinkled on some Lemon Pepper spice that I picked up at the store.  You can add whatever you’d like to the fish but I think the simplier the better.

Wait until the pan gets really hot and put the fish in it; it’s going to crackle and pop but DO NOT touch it.  Let it sit for about three minutes. After the three minute turn the fish over and place in the oven for another three minutes (yes place the hwole cast iron pan with the fish in it into the oven).

After three minutes you have a nice juicy piece of fish!

I paired the fish with some Tabuli w/ Feta, Brown Rice, Green Beans, and fruit!

Salmon Time

Well as soon as I was leaving work the bottom fell out! I debated whether or not to actually go to the gym but I’m glad I did!

I did shoulders and triceps. While I was there I had a huge bodybuilder come up to me and say my legs were almost as big as his! (actually his were huge but the fact that someone said I had big muscular legs boosted my ego! :p)

On to Dinner!!

I decided to cook my salmon since I had taken it out the night before. Got to get in my omega-6′s.

I started off with some asparagus first I pre-heated the oven to 400, then i washed and cut the asparagus, added some Extra Virgin Olive Oil, sprinkled some salt and pepper and sprayed a little bit of butter. I cooked it for about 40 minutes, or until it got tender

Now for the salmon! I had very thin Salmon I got in the cold section of the grocery, it’s by Vita. I added a sauce on top. My Salmon was thin and small so you will need to adjust the measurements according to how big of a fish you are cooking:

  • 1/4 cup reduced sour cream
  • tablespoon mustard
  • tablespoon lemon juice
  • pepper

I left the oven at 400 and popped the fish in for about 8 minutes. The fish was cut into little slices, they kind of fell apart as I put them on the plate :p! A nice glass of milk topped it all off!

Even the boys had their own tastey and healthy dinner! Pup chow and egg yolk! Yummy and shiny coats for them!

Lucky Lunch

I had originally  brought some Soy Chicken Salad and Low Carb tortillas for lunch BUT the boss decided to treat us to lunch at Lucky 32

Lucky 32 is already fairly healthy, but sometimes when we order lunch it can be hard to make the right choices, especially since we have no idea what types of things the chef is putting into the meal. I decided to go with Salmon, which I asked for the sauce and any butter to be left out, I also got Sweet Mashed Potatos  which I added some cinnamon to and lastly I had some Asparagus!
