Salute Your Salad

Morning all! I am so close to vacation time and I cannot wait!

I began the morning with a lovely Pecan Larabar. I must say that I have yet to have a flavor that isn’t tasty.  Some of the flavors look questionable, but thus far nothing has disappointed me!

In an attempt to eat everything in my fridge before I am away for five days, I decided it was a good idea to eat both of my Trader Joe’s Greek Yogurt.  Note the word thought it would be a good idea. 

I added in it a fresh apricot, granola, blackberry preserves and Peanut Butter and Co. Cinnamon Raisin Swirl.  ON TOP of all that I had Ezekiel bread with Almond Butter and Banana.

This had me stuffed for days! I’m not sure how I even managed to eat lunch!

I opted for another salad; this week has been a Salute! to salads

I tried out a nice Green Salad with goodies like red and green peppers, pickles, tomato, cucumber, sprinkle of cheese and a few pieces of ham.IMG_1463

I added an array of “salads” form the Harris Teeter bar (bean salad, tabbouleh, and a couple others)

I felt like I need a little more protein so I added a Frozen Entree.  Normally I try to stay away from these, they usually are loaded with preservatives and sodium.  Since this was an impromptu purchase, I decided to find one that was least toxic.

I went with the Lean Cuisine Steak Tips.  Only ate about half of it though.

 As if my stomach could take anymore from breakfast and lunch I had a pre-workout smoothie.

In the smoothie I had Trader Joe Frozen Tropical Fruit, along with Vanilla Whey Protein (ON), couple ice cubes, two strawberries, almond milk, non-fat yogurt and a splash of nonfat milk!

On the side was less than half of one of my muffins I had made earlier.  This one invovled Peanut Butter and Co. Dark Chocolate Dreams.  I warmed it up some and it was divine!

5 Days To Go

Okay folks, beach in about 5 days!! I can’t wait for vacation and see all my extended family! It’ll definately be relaxing. So how fast has this Summer/this year gone by so far???

Breakfast was super simple.  Egg-whites with Reduced Fat Pepperjack cheese along with French Meadow Hemp Bread and Trader Joe’s Almond Butter with a bit of Banana!

THat is my favorite thing to eat, bread with Almond Butter and Banana. I could eat that allll the time!

Lunch was a nice big yummy salad.  Lots of pretty colors (thanks to red and green peppers, shredded carrot and broccli) in my salad along with some grilled chicken breast, goji berries and almonds.

Add a nice side of sliced apple and red grapes (<3 me some red grapes). So simple and very filling + a fab way to get your requred veggies (because I do love veggies but have the darndest time getting my 3-4 servings in!).

Snack was a smoothie using Amazing Grass Chocolate.  I used a packest of AG,quarter of banana, 1/2 cup almond milk. 1/4 nonfat yogurt, some Barney Butter and 1/3 cup of Oatmeal.

I don’t think I’ll use Oatmeal again or I’ll need to mix it up WAY better than I did. It was too thick and I could taste the Oatmeal bits, it was kinda like drinking a chocolate glob.

Secret Ingredient

Today’s lunch included a nice refreshing salad.I had brought everything to work today with anticipation of putting it all together BUT I left one of the best ingredients at home.  Sometimes during lunch I go home to lets the boys out so I decided my salad could not survive without this ingredient so I went home for it!

The salad included:

  • Earthbound Romaine Lettuce and Spinach
  • Honey Glazed Chicken Breast (I took chicken breast and seasoned with pepper, rosemary, oregano and tiny bit of salt. In a saucepan but tablespoon of butter and olive oil and put on med-high.  In a separate container mixed 2 Tbl. of Balsamic Vinegar and Honey. Put in the chicken in the saucepan and cook for about 15 mins and then pour honey mixture and cook til done)
  • Combination of walnuts, almonds, shredded coconut and cranberries
  • and the VITAL ingredient…… FRESH APRICOT

Today I tried out the Amazing Grass products. I looked on their website for recipes since I have never had prior experience with Amazing Grass products (I always use Whey). I took a smoothie recipe I found:

  • 1/2 cup Almond Milk
  • 1/4 Nonfat Organic Yogurt
  • 1/4 Cup Quaker Oats
  • 1/2 Banana
  • handful of raspberries and blueberries
  • Packet of AG

It was good but next time I need to add some more berries, it wasn’t sweet enough for me. I also need to add more liquid, I made it reeeeeaaaallly thick!

fruit awesomeness

This recipie is easy to make using simple ingredients from around the house. Delicious Confetti Pea Salad! This recipe makes enough for two servings (or people) so you had adjust the serving accordingly:

  • 1 cup Ancient Harvest Quinoa Rotelle (any pasta will do but I suggest using Ancient Harvest, it’s gluten free and low on the glycemic index!)

  • can (or frozen bag) of peas
  • 4-6 oz chicken breast
  • red onion
  • 2 tbl of fat-free ranch AND low-fat mayo
  • 1tbl low fat plain yogurt
  • apple
  • walnuts
  • pepper

In a small container add the wet ingredients (mayo, ranch and yogurt) and sprinkle a bit of pepper. Cook the Quinoa Pasta and chop up the red onions into small pieces (however much you prefer) and chop the chicken into one-inch pieces. Also, heat up your peas.

When the pasta is finished, put it in a medium sized bowl and add the chicken, red onions and peas.  Coat with the yogurt/ranch/mayo mixture and stir in really well. Put dish in the refrigerator for at least an hour.  Before you eat/serve, chop up little apple bits (again as much as you want) and sprinkle with walnuts!

I made the BEST pre-workout smoothie today! It was light, fluffy, sweet and so refreshing! I had gotten a couple bags of frozen tropical fruits from Trader Joe’s last weekend.  In it they had papaya, mango, and pineapple infused with passion fruit juice. 

I scooped a cup full of the mix, along with 1/2 cup of almond milk, organic low fat yogurt, scoop vanilla whey  and some ice cubes!

Getting RIPPED!

So I’ve been trying hard to eat really clean starting this week.  I have tried to put on some muscle and with that can come some fat gains.  I’m going to do my darndest to eat pure and clean! I have a big beach/family reunion at the end of July so I have until then to lower that BF%!

I am going to incorporate smoothies a lot more into my daily diet. Today I made quite the delicious smoothie! It’s 1/2 cup of organic low fat yogurt and almond breeze, cup of spinach leaves, 1/2 cup of berries, 1/2 scoop of vanilla protein powder.

I also added a 2 cups of fresh watermelon and cantaloupe and my Three-Bean Salad, which was so refreshing and yummy. Here’s how you make it:

  • can of organic black, red kidney and chickpeas
  • Olive Oil
  • light Balsamic Vinaigrette
  • 1/2 cucumber
  • 1/2zucchini
  • halves of organic grape tomatoes
  • 1/4 of a large red onion
  • Basil

First drain, wash and rinse the beans together in a colander.  In a big bowl chop up cucumber, red onion and zucchini into little pieces. Over the veggies drizzle olive oil, then add the beans and the balsamic.  Toss the mixture then sprinkle basil.

Salad Time

So for the past two days  it’s been raining so hard that it’s actually flooded our downtown!

I still managed to make it to the gym yesterday but boy was it pouring hard!

Today’s lunch was a bit impromptu. I had planned on grilled chicken, side salad and a sweet potato. I hadn’t realized until I got the sweet potato out to cook that it was rotten!
So I took my side salad and decided to make it into a grilled chicken salad! I was actually glad this was my lunch, it was so fresh and so filling!

It had cucumber, baby corn, squash, green peppers and edamame. I added a bit of Greek Extra Virgin Olive Oil dressing.

Gotta Have Fruit

So I’ve been eating a lot of fruit lately! That’s because I bought a lot ha! Today’s Breakfast included Greek Yogurt and……FRUIT!

I collected an array of different berries including Blueberries, Strawberries and Raspberries.  I topped it off with Oikos Plain Fat Free Greek Yogurt and sprinkled some Acai Apple granola I got from Earthfare. 

I also added some dried Goji berries I had decided to try from Earthfare.  I really enjoyed these because they added a little chewiness to the mix; you can dried cranberries or some raisins for the same affect!

For dinner I had a random array of food! I took a small slice of tomato pie and ate a little bit of Earthfare Soy Chicken, then I added a smoothie (thanks R.R.!).

  • Scoop vanilla whey protein
  • spoonful of Barney Butter
  • 1/4 banana
  • tsp creatine
  • handful of greens
  • few ice cubes
  • 1/4 plain low fat organic yogurt
  • 1/4 almond milk

You can’t tell by the picture but it did turn out green! This is my first time using greens in a smoothie and it was so yummy!
