Beans and Franks

This morning I had a simple Trader Joe’s Greek yogurt with a bit of locally grown honey and Strawberry/Raspberry granola.

I am still having Hot Dog cravings so I bought some Ball Park Turkey all white meat hot dogs.  I put them on the griddle for a bit and for one of the hot dogs I put it on a wheat bun with some red oinions, ketchup and mustard.

The other dog was chopped up and put in a bowl of Trader Joe’s Organic Baked Beans.  I had a little bit of my tabuli but this time added some feta cheese to it, it was much better this way!

To top it all off I added a nice salad chock full of colorful veggies!

P.S.– I am sooo upset/frusterated/angry at the moment. I don’t know HOW it happened but I was writing my post for today and SOMEHOW my post from father’s day go cancelled. Like an idiot I have already deleted the pics from my camera AND I also wrote a personal piece focusing on my thought about using food as a “reward”.  I put a lot of thought into that post and now it’s gone!! GRRRR, I wish there was a way to backup my posts! If anyone knows how please let me know. I’d hate for this to happen again!!

Lunch at the Moose!

Today I got up a little late, I was so exhausted last night! I had the rest of my Clif Bar and got dressed and ready to go! After running a dew errands Kris and I ended up at the Farmer’s Market and got a bunch of delicious veggies! By this time it was mid-afternoon and I was definitely hungry! We stopped at the Moose Cafe and got a ton of food!

I started off with a homemade biscuit with honey on one half and apple butter on the other.

I ordered the special and got Pineapple Ham with sides of Hot Cinnamon Apples, Glazed Carrots and the most delicious Watermelon.

It was all so yummy! The hams was a bit salty but other than that the lunch hit the spot!

oh monday

I don’t know about you, but Mondays are the worst! I never want to get out of bed; even the pups this morning didn’t want to move!

I was a bit lazy today, nothing too creative for breakfast. I made a pepperjack cheese and egg white omelet with some French  Meadow Hemp bread with Maranatha Almond Butter and 1/3 of a banana.

For dinner I took chicken a breast and marinated it before I headed to the gym. I added a tablespoon of lemon juice, olive oil and sprinkled some salt, pepper, thyme and basil into a baggie with the chicken breast. I went to the gym while it marinated.

When I got home I put some roasted peppers and artichoke hearts on top popped it in the oven for about 40 minutes and I began my brussel sprouts.  I boiled them until they got tender and I drained the water out. Then I put them in a big bowl and poured some light Italian dressing into them.  Next I sprinkled them with some Parmesan cheese.IMG_1046

Lazy Sunday Night

After running around all day and cleaning and preparing my food for Monday I was too tired for anything fancy.  I went looking in my full freezer and got out one of the box dinners I’ve had for a bit. I put it in the oven for about 40 minutes and tada, dinner!

It was actually very good. I added a salad and Pilsbury roll along with it.  I got kinda full eating all that food!

Salad Time

So for the past two days  it’s been raining so hard that it’s actually flooded our downtown!

I still managed to make it to the gym yesterday but boy was it pouring hard!

Today’s lunch was a bit impromptu. I had planned on grilled chicken, side salad and a sweet potato. I hadn’t realized until I got the sweet potato out to cook that it was rotten!
So I took my side salad and decided to make it into a grilled chicken salad! I was actually glad this was my lunch, it was so fresh and so filling!

It had cucumber, baby corn, squash, green peppers and edamame. I added a bit of Greek Extra Virgin Olive Oil dressing.

Turkey Burger

Tonight I decided to go for something quick and easy, I made a veggie filled Turkey burger.

Here’s how I did it:

  • ground Turkey
  • 1 zucchini, cut it into very tiny pieces
  • 1 carrot, cut it into very tiny pieces
  • sprinkle of Thyme
  • 1 egg
  • 1/4 breadcrumbs
  • salt and pepper

Put all the ingredients into a bowl and make about 4 patties.  Pour a small amount of olive oil into a a skillet and put the oven onto medium heat. Cook the burgers about 3 to 4 minutes on each side. 

I couldn’t get any great pictures of it, but here’s what I got, I added a garden salad on the side.

It tasted so delicious!!

Now for dessert——-

Fruit with some Organic Chocolate Syrup!!

Mock Soy Chicken Salad

This is the best stuff! I got half a pound at Earthfare and now I finally get to eat it!  The ingredients are pretty simple: Textured Soy, Egg Free Mayo, Celery, Parsley, Apple Cider Vinegar, Herbs and Spices. The simpler the ingredients the better for you!

I just took two Mission Low Carb Tortilla wraps, added the Soy Chicken Salad and bit of lettuce on top.  Then I wrapped it up and enjoy!

I also added some steamfresh green beans.  I am not a huge vegetable eater but vegetables are sooo good for you.  They are low in calories, fat and chock full of fiber.  Of all the foods you can eat as much of at anytime, veggies are one of them.

The steamfresh bags are great for work (assuming you have a fridge with a freezer).  I am not a big fan of canned vegetables so these bags are great for me.  They are convenient, easy to make (put in the microwave for amount 6 mins) and are super cheap.  I like to get mine at Wal-Mart for about 2-3 dollars each.

To top the whole meal off, I added a nice fresh garden salad!

Lastly for dessert a piece of dark chocolate with a dab of peanut butter!

This is a very quick, easy and simple lunch with lots of nutritious value that can easily be made for work! yumm!

Lucky Lunch

I had originally  brought some Soy Chicken Salad and Low Carb tortillas for lunch BUT the boss decided to treat us to lunch at Lucky 32

Lucky 32 is already fairly healthy, but sometimes when we order lunch it can be hard to make the right choices, especially since we have no idea what types of things the chef is putting into the meal. I decided to go with Salmon, which I asked for the sauce and any butter to be left out, I also got Sweet Mashed Potatos  which I added some cinnamon to and lastly I had some Asparagus!

My Pantry!

I have a very small kitchen but I manage to fit A LOT of food in it! I like going grocery shopping almost every weekend (it’s my obsession).  I usually hit the Farmer’s Market, Wal-mart, Earthfare and Harris Teeter….overboard? Not at all! :p

Sunday is my day to have all my meals and snacks made for the week.  The key to having healthy meals simply and easily is preperation. I make my chicken and freeze it, I make my oatmeal bars and freeze them, cut up my fruits and wash all my greens.  This makes it easy so when I wake up and get ready for work all I have to grab and go!

 

Here is what my pantry and fridge look like after a typical Sunday grocery shopping trip:

My Essentials–

  • Organic Milk
  • Cage free eggs
  • Berries (strawberry, blueberry, raspberry)
  • Greek yogurt
  • Reduced/low fat cheese
  • Greens (romaine, kale, mustard or spinach)
  • Chopped Vegetables for salad (green peppers, cucumbers, celery, broccoli, tomato)
  • Organic Carrots and Celery
  • Hummus
  • Steam Veggies
  • Bananas, Apples, Oranges, Grapefruit
  • Ezekiel Sprouted Bread
  • Chicken Breast
  • Plain Oatmeal
  • Almond butter and Better N’ Peanut Butter
