GOOP Makes Lunch

So every Thursday I get the newsletter that Gwenyth Paltrow puts out called GOOP.  She features places to go, advice, things to do, recipes etc. which she bases on her own experiences and adventures.  This past Thursday she featured some recipes for people who are vegan. 

I decided to try the simple sandwich that she featured. She called this : Veggie BLAT.

Here is what you will need:

  • sprouted whole bread (I’m using French Meadow Hemp, you can also use Ezekiel)
  • Three strips of vegetarian bacon (I’m using morningstar)
  • Organic tomato slices
  • Organic spinach
  • Slices of avocado
  • Pepper
  • Mayo, or mustard or any condiment you want!

I added some organic carrots and hummus along with some Annie’s Cheddar Bunnies.

A cool refreshing cup of Green Tea to top it all off!

Although my sandwich was AAHH-mazing and very filling, when the 4 O’Clock time rolled around I was hungry again.  I had some more carrots with some dip then I created a delicious apple creation.

I cut an apple in half and hollowed out the middle. I put a scoop of Better N’ Peanut Butter in the middle and put some Apple Acai Granola on top. I sprinkled some cinnamon over the apple and added a small dallop of Chocolate Peanut Butter. 

WOW. What a fab snack! I think I love peanut butter waaaaay too much. I know I eat it everyday!!

So I LOVE LOVE LOVE getting packages in the mail (my aunt is Queen of Care Packages). Today however, I got some samples from Amazing Grass which I have seen on EVERY blogger’s wesbite

roasted veggies and goat cheese

Today’s lunch was a variation of a delicious sandwich I order from a local food joint in High Point called “Grateful Bread”

The kind folks at French Meadow Bakery sent me some of their Our Daily Bread.  The night before I had taken some veggies that I had cut up earlier (zucchini, squash, peppers and onions) and drizzled some Olive Oil over them.  I put the oven to 450 and baked them for about 15 minutes or so, until they were soft and had a golden color.

Today at work I heated them up some and toasted my bread.  I spread some goat cheese on the bread and placed the roasted veggies and some spinach to make a delectable sandwich! I finished off my Trader Joe’s Baked Beans and added another colorful side salad.

Today’s pre-workout meal is a pretty green smoothies made with spinach and bluerries. So pretttty and yummy!

Chef Rodie!

Tonight’s dinner was brought to you by my co-worker and good friend Rodie.  She is our local vegetarian and has informed me about products like Morningstar, Boca and even introduced my tongue to TOMATO PIE!!!

She is a very good cook and made some fun food over the weekend that I was fortunate anough to be able to enjoy as well! It was very delicious and the recipe looks very simple! Enjoy!

Simple Vegan Pinto Corn Cakes with Peanut Cilantro Salsa

For cakes:

One can organic pinto beans

1 fresh ear of corn cut from the cob

Small amount of olive oil (a few tablespoons)

One handful of chopped onions

Crushed red pepper

One teaspoon of garlic

 

For Salsa:

One bunch fresh Cilantro

¼ lb of dr y unsalted organic peanuts- crushed

1 Fresh ear of corn

White vinegar

A few pinches of sugar or agave nectar

 

 

Heat pan with small amount of olive oil. Add corn and a dash of crushed red pepper. Cook corn on med high with a lid until almost done. Take lid off and turn up heat to let corn brown and crisp a little. Divide corn into two bowls- one for the cakes and one for the salsa.

 

Rinse and drain Pintos. Combine corn, onion and pintos. Mash together and form into patties.

Fry on medium with remaining olive oil. Add pepper to taste. Place lid over cakes to cook them all the way through. When they are almost done, take off lid again for crispiness.

 

To make Salsa:

Combine Chopped cilantro, crushed peanuts, and a small bit of onion with the bowl of corn. Pour in ¼ cup of vinegar. Depending on the level of sweetness you prefer add a teaspoon of sugar or agave. Stir together. You can add more sugar or vinegar, depending on how you like it. You can make the salsa in advance and chill it, if you like.

 

I like to cut up fresh guacamole and ripe tomatoes to accompany this dish.

Veggie De-lightful!

Today’s lunch was quite scrumptious I have to admit! I used some of the veggies I had cut up from the Farmer’s Market.

I took Mission Low-Carb tortillas and on each spread a tablespoon of Tribe Red Pepper Hummus.  Then on top I added a bunch of veggies! You can put whatever you want, in my case I put spinach leaves, zucchinis, cucumbers, tomato, baby corn and squash.

I made a pretty wrap and added some Kashi Cheddar crackers.

 This was such a yummmy and satisfying lunch! I am so ready to go workout now! I got on the treadmill last night and it felt so good! My energy was high and I was shocked how long I could run! I’m definitely ready to push myself tonight, just a few more hours of work left…..

On a random note, I just happened to gossip surfing and I came across recent pictures of Kim Kardashian and Mariah Carey. How FAB-ulous do they look?  I love when women have muscles or curves; they have real bodies!

Getting RIPPED!

So I’ve been trying hard to eat really clean starting this week.  I have tried to put on some muscle and with that can come some fat gains.  I’m going to do my darndest to eat pure and clean! I have a big beach/family reunion at the end of July so I have until then to lower that BF%!

I am going to incorporate smoothies a lot more into my daily diet. Today I made quite the delicious smoothie! It’s 1/2 cup of organic low fat yogurt and almond breeze, cup of spinach leaves, 1/2 cup of berries, 1/2 scoop of vanilla protein powder.

I also added a 2 cups of fresh watermelon and cantaloupe and my Three-Bean Salad, which was so refreshing and yummy. Here’s how you make it:

  • can of organic black, red kidney and chickpeas
  • Olive Oil
  • light Balsamic Vinaigrette
  • 1/2 cucumber
  • 1/2zucchini
  • halves of organic grape tomatoes
  • 1/4 of a large red onion
  • Basil

First drain, wash and rinse the beans together in a colander.  In a big bowl chop up cucumber, red onion and zucchini into little pieces. Over the veggies drizzle olive oil, then add the beans and the balsamic.  Toss the mixture then sprinkle basil.

Pumpkin Oatmeal

It’s another Biscuit Friday and another RAINYday. Yuck! The ladies at work got Hardees for breakfast.  I opted out and decided to make Pumpkin Oatmeal.

I took almost a cup of Quaker Old Fashioned and added 1/3 cup of milk and water.  I took a couple spoonfuls of Libby’s Pure Pumpkin, sprinkled cinnamon and pumpkin spice, handful of walnuts that I crushed and a spoon of Better N’ Peanut butter.

My oatmeal was orange! It was very good and filling.  I also decided to add more protein by pairing it with a Morningstar Sausage Patty.

Lunch included delicious food from PF Changs! I had two lettuce wraps, egg drop soup and (gulp) Almond and Cashew Chicken.  I decided to make today my extra calorie cheat day! I’ll just work extra hard and go extra long at the gym!

Tomato Pie Time!!

I decided that the pups need a good bath! I don’t think they enjoyed it too much but they were good about it!

I have a special treat for dinner; Tomato Pie! I learned about Tomato Pie from the local vegetarian that is in my office.  It sounds odd but it tastes sooo amazing! It tastes a lot like pizza. Here is what you will need:

  • frozen pie shell
  • can of diced or crush tomato
  • mayo (try something reduced-fat or a healthier mayo)
  • 2% Shredded Mozzarella
  • Parmesan cheese
  • Basil, Oregano and Rosemary

Here are the steps to making this delicious pie:

                1. First put the oven to about 375 and put just the pie in for about 10 minutes

                        2. Put the whole can (juice and all) of crushed or diced tomatoes into the pie shell.

                                3.  Next spread the mayo on top.  Don’t use too much otherwise it tastes like a Mayo-Pie!  Just put on enough to layer over the tomatoes.  Next add the spices on top, I put on pepper, Parmesan cheese, basil, rosemary and oregano. Pop in the oven for 25 minutes

                                4. After baking for about 25 mintues take it out of the oven.  It should have a golden look and the crust should have a nice brown look

                                  5. Last step is to cover the pie with the shredded Mozzarella.  After I’ve covered the pie I like to add just a sprinkle of the spices once more.  Pop it back into the oven for about 15-20 more ,minutes or until cheese has completely melted.

Now it’s time for dinner! I added a side salad and viola!

Now for dessert! So yummy! It’s a peanut butter chocolate square from Earthfare along with some fresh strawberries, raspberries and organic chocolate sauce!!

P.S. This is totally un-food related but as I’m eating I’m watching my DVR. Anyone else seen the show Southland on NBC??  If you haven’t you MUST watch it. It’s so so so very good!

Mock Soy Chicken Salad

This is the best stuff! I got half a pound at Earthfare and now I finally get to eat it!  The ingredients are pretty simple: Textured Soy, Egg Free Mayo, Celery, Parsley, Apple Cider Vinegar, Herbs and Spices. The simpler the ingredients the better for you!

I just took two Mission Low Carb Tortilla wraps, added the Soy Chicken Salad and bit of lettuce on top.  Then I wrapped it up and enjoy!

I also added some steamfresh green beans.  I am not a huge vegetable eater but vegetables are sooo good for you.  They are low in calories, fat and chock full of fiber.  Of all the foods you can eat as much of at anytime, veggies are one of them.

The steamfresh bags are great for work (assuming you have a fridge with a freezer).  I am not a big fan of canned vegetables so these bags are great for me.  They are convenient, easy to make (put in the microwave for amount 6 mins) and are super cheap.  I like to get mine at Wal-Mart for about 2-3 dollars each.

To top the whole meal off, I added a nice fresh garden salad!

Lastly for dessert a piece of dark chocolate with a dab of peanut butter!

This is a very quick, easy and simple lunch with lots of nutritious value that can easily be made for work! yumm!
